Weekly Meal Plan #19

February 13 - February 19

I am sooooo excited for this week's meal plan!  I discovered a new blog: Skinny Taste.  The blogger, Gina, offers "skinny recipes" and she organizes them not only by dish type, or ingredients, but Weight Watcher Points!  I've been browsing her blog all week and it has me drooling every time.  I think that is a good sign, because healthy dishes don't normally have me drooling just by the sight of them.  So, I decided this weeks plan will be composed of all meals from this blog.  Enjoy!

The Grocery List

3 medium onions
1 shallot
1 bunch of spinach
2 bunches of green onions
1 1/2 lbs of potatoes
1 small bell pepper
4 medium zucchini
2 tomatos
1 avocado
1 line
1 bunch of cilantro
1 celery stalk
8oz mushrooms
Garlic
1 package frozen mixed veggies
10 oz frozen spinach
8 skinless chicken thighs
2 skinless chicken breasts
1lb ground turkey
1lb lean ground beef
16 large shrimp
12 oz high fiber elbow pasta
1 lb high fiber ziti
2 packages of low carb, whole wheat, flour tortillas
Whole wheat bread crumbs
Long grain rice
1 packet Goya Sazon
1 packet of Goya Sazon Tropical
Adobo Powder
Chicken bouillon cubes
1 small can chipotle chilis in adobo sauce
2 cans tomato sauce
1 small can tomato paste
28 oz crushed tomatoes
Worcestershire sauce
Pam spray - butter flavored
Butter
Light Butter
Flour
Skim milk
64oz Fat Free Chicken Broth
1 small can of fat free beef broth
16 oz Sargento 2% reduced fat mild cheddar
16 oz shredded low fat mexican cheese
8 oz fat-free ricatto
8 oz part skim mozzarella
Sour cream
Parmesan cheese
White wine
Eggs

Weekly Meal Plan #11

December 5-December 11

Happy winter!  December sure did come in with a snowy bang here in Chicago.  With 5 inches on the ground, it's hard not to be in the holiday spirit!

A quick shout out to my brother-in-law and his new wife!  Congratulations Jason and April!  They were married just yesterday in St. Johns.  With the snow here, they certainly planned that well!

Stove Top Mac-n-Cheese

I found an adaptation of this recipe that added slices of cheddar bratwurst.  Sounds pretty darn good!

2 onions
1 carrot
garlic
1 bunch of green onions 
1 lime
Romaine lettuce
1 bunch of kale
1lb of ground turkey
2 1/2 lbs of boneless chicken breasts
1lb peeled/deveined cooked shrimp
1/2 lb Italian sausage
1 lb flank steak
Bread crumbs
Elbow macaroni 
1 pkg cheese tortellini
2 pkgs flour tortillas
2 cans of diced green chilies
1 can of diced tomatos
2 cans Italian-style stewed tomatos
1 can condensed french onion soup
BBQ sauce
Worcestershire sauce 
Hot sauce
Mayo or salad dressing
Salsa
Eggs
Milk
1 can evaporated milk (6 oz)
2 pkgs shredded cheddar cheese
1 pkg shredded swiss cheese
Parmesan cheese
Kosher salt
Dry mustard
Flour
Seafood seasoning blend
Fajita seasoning
Honey

Weekly Meal Plan #3

I’m back!!  And, wow….do I feel much better!  I am much more with it, organized and not so stressed.  Amazing how things can change in a week, huh?  So, here’s meal plan #3!

September 19-September 25

Sunday – BBQ Chicken  (See below)
Monday – Stuffed Red Peppers (See below)
Friday – Tomato Soup and Grilled Cheese (see below)
Saturday – Honey Mustard Salmon  (See below)

BBQ Chicken

This is a crazy simple meal.  At our local fresh produce store, they have already cut and seasoned BBQ Chicken.  It’s an entire half of a chicken.

To cook it, we cut up red potatoes, onions and red peppers, layer them at the bottom of a dutch oven, drizzle them with olive oil, place the half chicken on top, and pop it in the oven at 350 degrees for about 45-60 minutes.   That’s all folks!

ETA:  Cook at 400 degrees for 60 minutes, or until internal thermometer reads 180 degrees.

Stuffed Red Peppers

You can use either green or red peppers for this, but I love the semi-sweet flavor of the red peppers.  Mmmmm.

6 red peppers, washed, with tops cut off and deseeded
2 tbs. of Olive Oil (for pans that are not non-stick)
1 1/2 lbs. of ground beef
1 cup of cooked rice
1 medium onion, chopped
1 tsp. salt
1/8 tsp. of black pepper
dash of basil
1/2 cup of ketchup
1 8oz. can of tomato sauce

Heat oil in skillet and brown ground beef.   Combine beef and next 6 ingredients.  Stuff peppers with beef mixture.  Arrange peppers in a large crock pot.  Pour tomato sauce over peppers.  Cook on low for 3-4 hours.

Tomato Soup and Grilled Cheese

Nothing fancy here!  You know what to do!

Honey Mustard Salmon

Salmon is usually pretty good no matter how it’s prepared.  This one is very easy and tasty. 

1 lb Salmon
2 tbs. Dijon mustard
2 tbs. honey
Salt and pepper

Wash salmon and place it in a baking pan sprayed with a cooking spray.   Season Salmon with salt and pepper and set aside.

Mix mustard with honey.  Pour it over the salmon.

Bake at 375 degrees for 20 minutes.  Serve with a vegetable of your choice!

1 1/2 lbs ground beef

1 8oz. can of tomato sauce
1 small butternut squash
Elbow macaroni
Unsalted butter
All-purpose flour
Powdered mustard
Milk
Monterey Jack cheese
Sharp Cheddar cheese
Grape Tomatoes
Kalamata or black olives
Fresh basil
Fresh flat-leaf parsley
Balsamic vinger
Fresh oregano
Garlic
Olive Oil
Crumbled feta cheese
4 ciabatta sandwich rolls
Flour tortillas
Gouda or smoked gouda cheese
1/2 lb of cooked or smoked turkey or chicken.
Bottled roasted red pepper
Mango or mango-peach salsa
Fresh cilantro (optional)
Tomato soup
American cheese
Bread
1 lbs of salmon
Dijon mustard
